Chia & Raspberry Fresca
I crave this often, especially when the weather is warming up, the sun is shining and I feel like having a fresh coconut on a beach somewhere…which is not always possible but this comes pretty close in my eyes!
This chia Fresca is basically nature’s energy drink. The perfect afternoon pick me up, or post-workout boost, it’s full of minerals and electrolytes from the coconut water and the chia seeds. Plenty of vitamin C from the lime & raspberries, and the added energy boost from the chia seeds, as well as your daily dose of Omega 3s!
Ingredients :

1 cup / 250ml of ice-cold coconut water

1 cup / 250ml of soda water

1 heaped tbsp of chia seeds

1 lime juice
-
1 small handful of raspberries (5/6 berries)

optional: 1 pinch of pink Himalayan sea salt + one handful of ice cubes
Method :

Crush your raspberries using a fork or a pestle and mortar

Add the raspberries + chia seeds to your glass

Top with the coconut water + soda water

Add your lime juice and mix well

At this point add a pinch of Himalayan sea salt for a boost of minerals, and a handful of ice if your waters aren’t cold enough!

Enjoy with a straw..! (you can add a cute slice of lime for decoration if you want to feel extra fancy!)
