RECIPE | Gluten Free Chocolate & Almond Cupcakes

I have literally JUST made these (you might have seen them on Instagram a moment ago..!) I thought I'd pop in quickly and share this DELICIOUS recipe. They are so easy to make, they're gooey, unreal when eaten warm & they are actually pretty healthy.. no grains & no butter (although if you wanted you could potentially swap the coconut oil for butter..) Chocolate is the answer to a lot of things, especially when you're feeling a little meh, it's been raining all day & all you want to do is snuggle back into bed... Ingredients (Makes 6 cupcakes) // Adapted from this recipe by A Couple Cooks

- 1 cup of almond meal (ground almonds)

- 2 egg

- 5 tbsp of coconut oil

- 5 tbsp of honey

- 2/3 cup of semi-sweet chocolate chips (dark chocolate)

- 1 tsp of ground cinnamon

- 1 pinch of salt

- 1/2 tsp of gluten free baking powder

Notes :

+ Preheat your oven on fan at 180 degrees Celsius

+ In a bain-marie or if you're feeling lazy in the microwave, melt together the coconut oil, honey & chocolate chips. Make sure to stir often & take it off the heat as soon as it's all combined & melted. Let cool for a minute or two.

+ In a separate bowl beat the eggs until fluffy, add the almond meal, beat until combined. Add your salt, baking powder & cinnamon to the mixture.

+ Combine the chocolate mixture & your egg/almond mixture.

+ Divide into 6 cupcake liners inside a cupcake tray or directly into some cupcake baking cups.

+ Bake for 25/30 min or until a knife comes out clean.

+ Eat while they're still warm, they would be perfect with warm custard, or with some creamy icing (I didn't have the time to do either so I ate them plain..!)
