Recipe | Hummus No-Bake Pizza
This is just a pita bread disguised as a pizza - because hey who doesn't like pizza?!
This has been my go-to lunch for the past week! I can't get enough of it. It's SO easy & almost too quick. I've had this obsession with both hummus & paprika over the past couple of weeks, so I'm trying to find all the different ways to combine both..
Since I've discovered Molly's hummus, I've been making weekly (daily) batches. It literally takes 3 minutes. I've now made it a thing to stock up on tahini & chickpeas every time I go food shopping, because I'm terrified to run out.
I'm all about healthy, easy lunches. At dinner I can usually take the time to do something a bit more elaborate, breakfast, well breakfast I always have time for (as you know), but lunches they are often forgotten about.
When I was working in an office, my life was revolving around lunch! Now, I'm ashamed to say I find myself skipping lunch more often than I'd like to admit it, & replace it with an early dinner (& snacking - kids don't do that) It's not only unhealthy, it's just plain dumb.
I have very recently discovered the talented Ella from Deliciously Ella. She has got the most amazing, beautiful & colourful recipes on her website. She's got a trick or two about making quick healthy lunches, which I'm about to start imitating this week...
But anyway, the point is. Hummus Pizza. Hummus Flatbread. Hummus Avocado Cherry Tomatoes Feta Pizza Flatbread. Whatever you want to call it. It's easy as 1,2,3.
Ingredients (for 1 person)
- 1 large round pita bread (or two smaller ones)
- 3 or 4 tbps of Molly's hummus
- 1/2 avocado chopped
- 1 handful of cherry tomatoes cut in half
- Crumbled Feta cheese (as much as you want)
- Olive Oil
- Lemon
- Paprika
-Salt & Pepper
Notes:
Place your pita bread in a hot oven for a few minutes just enough time to warm it up (don't let it in too long it it will dry out and get all crispy)
Spread your hummus all over your pita. Sprinkle your cherry tomatoes, avocado, feta cheese (& whatever other delicious veggies you have on hand.. grated carrots is a favourite of mine, cucumbers, olives, rocket salad... get creative!)
Drizzle with olive oil, a little lemon juice, a good dose of paprika (I also like to add a bit of turmeric & cumin) season & voila!
