Recipe | Buckwheat Pancakes (Gluten Free)
I declare this week my Breakfast themed week! I thought I'd just continue on the topic with these yummy buckwheat pancakes.
As you may or may not know I've cut off wheat quite drastically out of my diet (I do have off days though so it's not THAT drastic...I'm not completely crazy nor do I medically need to do this but I've been feeling so much better ever since) So as a survival need I've had to come up with ways to still eat my favourite foods minus the wheat factor.
This is the simplest & quickest pancake recipe in the history of easy pancake recipes.
Ingredients:
1 mug of buckwheat flour
1 mug of milk
1/2 tsp of baking powder
1/2 tsp of cinnamon powder
1/2 tsp xanthan gum
1 egg
1 tbsp of sugar
1 pinch of salt
| You can easily swap the buckwheat flour for normal flour, just take the xanthan gum out! What I've also done in the past is make them half buckwheat half rice flour OR half buckwheat half wheat flour..
| I use cinnamon powder because I love it, but also because if you're not used to buckwheat flour you might find it as certain taste, which I like but cinnamon just goes well with it!
Notes:
>> Grab one normal sized mug (for two people) one small mug (if it's just for you) or just double up the recipe if you're feeding a small army.
>> Use the mug as your measuring cup.
>> Pour your mug of flour in a big bowl, along with the baking powder, xhantham gum, cinnamon, salt & sugar. Combine.
>> Crack your egg right in the middle. Start whisking slowly adding in your mug of milk (splashes after splashes) until everything is combined.
>> In a very hot pan greased with a bit of coconut oil (or butter) pour your batter in whatever shape makes you happy, when bubbles start appearing at the surface, flip them on the other side, wait a minute or until golden & voila!
I was lacking any exciting toppings on that day, so I went for butter & golden syrup along with fresh mango & green tea. But they get even better with yoghurt & fresh berries, bacon & maple syrup or Nutella - everything's better with Nutella.
Just FYI these are a cross between american pancakes & crepes. They aren't as fluffy as american pancakes but fluffier than crepes... That totally makes sense right?!
