Leek & Bacon Quiche

Tarts & quiches are just my easy 'go to' lunch. You can make a tart (or quiche) with pretty much anything. All you need is some flour, butter & water to make a nice pastry & a few extra ingredients of your choice for the filling (+ eggs & milk if it's a quiche!) Have it with a salad of your choice, carrots, avocados, kale, bacon...

That day we picked the last poor leeks left in the garden & made a grated carrot & cumin salad to go with it. All you have to do is follow my quiche recipe, replacing the peppers with 3 medium leeks (sliced lengthways then in 2cm pieces) which have been cooked in a heated pan + butter until soft, beforehand. Tomorrow I think mum is making her famous onion tart, same deal without the eggs + milk mixture you found in the quiche. The possibilities are endless.
