Chicken and poached egg salad

Lately I have been craving fresh salads for a light dinner - days are getting longer, the layers are slowly dropping off and all I want is summer, in the air and on my plate!

So naturally I turn to all things fresh and colourful! This salad is so simple and perfect if you have leftover chicken like I did - I roasted a whole chicken over the weekend and enjoyed the leftovers all week long (chicken recipe from The Londoner - which I have to point out looked a LOT better coming out of the oven than after a night spent in the fridge, but delicious all the same! ) 

I simply tossed together a few handfuls of lettuce, half an avocado, a few pieces of feta cheese, some of my leftover chicken, one poached egg, squeezed the juice of half a lemon, drizzled some olive oil, sprinkled some salt and pepper and voila! So easy, very satisfying, light and healthy!

This is truly the result of improvisation - you could make so many different variations of this.. add some croutons, make a caesar salad dressing if you're feeling a little adventurous, add cherry tomatoes, cucumber, spring onions... the possibilities are endless!

Can I just say...how pretty are those eggs!? Whole Foods you rock my world. that. is. all.
