Simple Snack | Baked Sweet Potato Chips with Avocado & Lime dip

The easiest, most delicious, healthiest, heart warming snack you could make ever (well one of them anyway). You could also transform this into a light lunch (which I did, but then mid-afternoon I went through my kitchen like a hungry monster in search for all the foods, so maybe pair it with a hearty salad?)

I have to constantly remind myself that it is in fact Autumn on this side of the world.. It's a different kind of Autumn to what I'm used to, much warmer, more humid, more flowers & the unusual possibility to wear a bikini once in a while when the heat goes up is still surprising to me.

I'm just really curious to see what 'Winter' is going to be like. With Autumn in mind, pumpkins, sweet potatoes, butternut squash & all their cousins are everywhere, so I oblige every time I'm at the supermarket & go seasonal with my snacks.

This is not exactly a recipe, more of a 'oh-look-how-i-combined-two-vegetables-together' kind thing.. 

Ingredients (serves 1) :

- 1 medium sweet potato peeled

- 1 medium avocado

- half a lime

 

- Olive oil

- Paprika

- Salt & Pepper

 

Notes :

+ Pre-heat your oven on fan at 180 degrees Celsius.

+ Peel, wash & cut your sweet potato into thin wedges.

+ Place them in a bowl, drizzle them with a good dose of olive oil, sprinkle with paprika, add a generous pinch of  Maldon salt (or any other large flakes salt!). Mix everything together with your hands so you know you've coated every single chip with oil, that's the secret to crispy chips.

+ Place on a baking tray lined with parchment paper. Pop it in the oven for about 20 min or until your chips looks golden brown and crispy. (Keep an eye on them & move them about half way through! FYI mine are slightly over done.. still not used to this evil oven!)

+ While your chips are in the oven, grab a bowl, scoop out your avocado & mash it with a fork.

+ Once it's all mashed and creamy, add your lime juice, salt & pepper (even a little paprika if you feel like it - I'm going through a paprika phase ((yep - still)) ) Mix everything together, taste. Is it seasoned enough for you? Try not to eat the whole thing before the chips come out of the oven!

+ Once the chips are cooked. Let them cool for 5 minutes (resist the urge to burn all your fingers eating them straight away like I did. Safety first kids!)

+ Dip the chips to your heart's content!
