I’ve teased you with these over the past few months, showing you on Instagram but never giving you the recipe, so here we go finally!
I discovered these one day when there were no sweet treats in the house and when a craving hits you, you make do with what you have, which in this case was: oats, cacao powder and some dates!
Which btw you can totally make with just these 3 ingredients and a little liquid like water or plant milk, but over the past few months they became a favourite of ours and I experimented with all sorts of nuts and seeds, because not only are they the perfect afternoon treat, the more you add to them, the more nutritious and guilt-free they are!
I make these at least once a week and I’d be lying if I said they lasted more than a couple of hours…
Ingredients (makes around 12 truffles) :
– 1 cup or 90 g of oats (I use rolled oats but porridge oats would also work – if you need this to be strictly gluten-free make sure your oats are GF labelled)
– 8 medium pitted Medjool dates
– 2 tbsp of almond butter (peanut butter or any seed butter of your choice would work!)
– 3 heaped tbsp of raw cacao powder
– 2 or 3 (or more) tbsp of plant milk (I use oat or soy)
– 1/2 cup of your nut of choice : cashews, almonds, macadamia, roasted hazelnuts…
– a small pinch of sea salt
– Optional : a small handful of pumpkin seeds or hemp hearts, a sprinkle of chia seeds (I love to jam pack as much nutrition in these as possible!)
– Optional: desiccated coconut for rolling the balls.
Method :
– In your blender or food processor, add all the ingredients and start with one tbsp of oat milk.
– Blend until smooth, add more liquid a little at a time as you go to help you blend everything together.
– Once you’ve reached a thick smooth dough like consistency (one that you can easily roll between your hands) stop.
– Start rolling into balls, and place them on a tray that will fit in your freezer. Roll them in coconut if you’d like or do half like I do! (You could also roll these in hazelnut pieces and turn these into healthy Ferrero Rochers!)
– Once they’re all rolled, place in the freezer for 15/20 min, or until they are firm to the touch but not all frozen!
– You can keep these in an airtight jar in the fridge for a few days (I dare you to try and keep these for more than 24 hours)
