I am back from France! and it’s hotter here than it was most days when we were down there! (we picked the rainiest week in June to travel – obviously!) but I have a ton of photos to share with you, and we’re going back in August for 2 weeks, so plenty more to come!
I am currently in my editing cave, and it’s real hot out here. No pool in sight, not much air in sight either, I do back and forth trips to the fridge. the shower to try and cool down and all I can eat is nicecream by the spoonful.
A few of you asked for the recipe when I posted this photo on Instagram.. I can’t really call this a ‘recipe’ – it’s SO easy, but again when you don’t know, you don’t know!
Bananas are a definite staple in my diet, I add them to my morning smoothies, I have them whole as snacks, or by the bowl full as nicecream! (Michael requests this most evenings post dinner..)
Bananas are high in fiber, vitamin B6, potassium which helps regulate heart function and blood pressure, and they act as an excellent prebiotic to promote gut friendly bacteria. They keep you full and satisfied, so nicecream for breakfast? Yes please!
Ingredients – Serves 2 :
– 3 frozen bananas (they need to be fully ripe, spotty bananas, and frozen a minimum of 24hrs beforehand)
– 2 tbsp of crunchy peanut butter
– 1/4 tsp of cinnamon
– 2 tbsp of plant milk (coconut/soy/almond/oat.. your pick!)
– toppings of your choice (my favourites : chia seeds for crunchiness, rawnola, passionfruit, fresh berries, peaches, cacao nibs, coconut flakes… go wild!)
1. Remember to freeze your ripe bananas a minimum of 24hours ahead – freeze them in small chunks so it’s easier to process them (I normally buy bananas in bulk when I see them ripe at the market and freeze a whole bunch)
2. Take out your frozen nanas, and let them thaw out for 10min
3. Add bananas to food processor, with the peanut butter, cinnamon, and a splash of plant milk (this makes the process quicker)
4. Blend on high speed – you might have to stop and scrape out the frozen chunks off the side of the processor and press them down a few times, and maybe add an extra splash of plant milk (don’t overdo it on the liquid or the consistency will be more smoothie like..)
5. Once all blended and creamy like ice cream, serve up into two bowls.
6. Add toppings of your choice and ENJOY!
